Description
Amaranth is a very old high-protein plant that originated in South America. Their colorful leaves are among the most nutritious of vegetable greens and the grain it produces is what contains the highly nourishing protein. The essential amino acid balance is close to ideal and when it comes to meeting the protein needs of the human body, it surpasses both cows milk and soybeans. Amaranth is high in amino acid lysine, which is lacking in most cereals made from sorghum, corn, barley and wheat. Beautiful both inside and out. Corn growing in the background.
